Tasty Roast Potato Salad for the Weekender

This roast potato salad combines crispy golden potatoes with crunchy lettuce, red onion, and a creamy homemade dressing for the perfect balance of comfort and freshness. It’s easy to make, filling, and great for sharing with family or friends during a relaxed weekend lunch or barbecue.

Roast Potato Salad Recipe

Ingredients

Serves 4–6

For the potatoes

  • 1 kg potatoes, chopped
  • 2–3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and black pepper

Salad ingredients

  • 1 head lettuce, chopped(Optional and can substitute with chicken)
  • 1 red onion, thinly sliced
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved

Dressing

  • 3 tbsp mayonnaise
  • 2 tbsp plain yoghurt
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper to taste

Method
1. Roast the potatoes

Preheat the oven to 220°C. Toss the potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread them on a baking tray and roast for 35–45 minutes until crispy and golden.

2. Prepare the salad

Wash and chop the lettuce. Slice the red onion and cucumber, then halve the cherry tomatoes.

3. Make the dressing

In a small bowl, mix mayonnaise, yoghurt, mustard, lemon juice, garlic, salt, and pepper until smooth.

4. Assemble

Allow the potatoes to cool slightly, then combine them with the lettuce, onion, cucumber, and tomatoes. Pour over the dressing and toss gently before serving.

This roast potato salad is the kind of dish that brings everyone back for seconds. The crispy potatoes, fresh vegetables, and creamy dressing make it satisfying without feeling too heavy. Serve it warm or chilled alongside grilled meat, chicken, or on its own as a delicious weekend favorite.

Overcooking the potatoes is the fastest way to ruin everything, mushy potato salad is a crime. Another mistake is skipping salt in the boiling water, which leads to bland potatoes no dressing can save. Also, do not drown the salad in mayo right away; you can always add more, but you cannot undo soup. And please, let it chill, warm potato salad is just confusing.
